Looking forward to the summer and all the lovely fresh fruits that come with this time of year. Mixed with chocolate, these turn into a treat that provides a new twist to the familiar flavours.
Try Strawberry Balsamic in dark or white chocolate shells – the balsamic is brilliant at bringing out and enhancing the strawberry flavour. Then the popular Raspberry truffle in white or milk chocolate and decorated with freeze dried raspberries has to be one of your ‘five (or is it now ten) a day’ made using a ganache made from mixing raspberry puree with chocolate.
As the season progresses the flavours reflect what’s fresh in the garden – Gooseberry, Black Currant and Rhubarb are popular alternatives along with Passion Fruit (also available in heart-shaped truffles for Valentines Day!) and Pears. And if you prefer your chocolate collection ‘fortified’ this can be achieved with an extra kick of locally distilled and appropriately flavoured gin and liqueurs, perhaps.
